February 9th is Pancake Day!

We asked the #ukrunchat community for their favourite pancake recipes so you can get inspired for pancake day & I’m sure you will use them all year round too!

Here they are:

“I like a good protein pancake for energy before or recovery after a run ….. Add fresh fruit, honey, nuts etc if you like… they are very filing and very yummy!”

Protein Pancakes:

1 egg

25g rolled oats

1 scoop protein powder (vanilla)

1 small banana

Splash of water

Whisk or blend

Heat 1/2 tsp coconut oil & fry 3 dollops/dessert spoons of batter, 1 min each side medium heat.  Repeat with rest of batter.  Serve with Greek Yoghurt.

This is a pancake recipe I use for recovery, or pre-long run:

1 cup wholemeal flour

1/4 cup flaxseed

1/4 cup baobab or raw cacao

1 & 1/2 cups of milk

2 eggs

 

Cook with coconut oil!

My Easy Banana Pancakes:

1 egg

1 banana… Mashed

Milk (optional)

Whisked together!

Butter in a frying pan…cook as pancake

Greek yoghurt.. Berries

I quite love these protein happy pancakes…Apparently baby approved too ^_^

  • 1 large sweet potato, peeled
  • 1-2 eggs*
  • 2-3 tsp ground cinnamon
  • 1 tbsp (a large spoonful) of butter

Boil/steam the potato & mash

Add one egg and the cinnamon, then purée again. NOTE THE CONSISTENCY! If it’s very very thick, then add another egg.

Cook on both sides.

 

Easy Sweet Potato Pancakes

I Love Pancakes! These ones are great- no gluten or dairy. just 50g buckwheat flour, an egg, a banana, & bit of almond milk. I always add coconut oil, chia seeds and chopped banana, and sometimes a drizzle of honey!

Banana pancakes. 1 banana 2 eggs. Smudge of peanut butter tabke spoon of porridge. In the nutribullet. Fry with coconut oil.

Basic Protein Pancakes

 

1/4 cup of raw oats

1/4 cup of Cottage Cheese

1/2 Scoop of Protein Powder

1/2 Cup of Egg Whites

  1. Blend all the ingredients until a batter forms. Pour over a hot griddle.
  2. Flip when the edges start browning.
  3. Serve with a tablespoon of natural peanut butter and top with almonds.

2 Ingredient Pancakes:

! Medium Banana

2 Large Eggs

Optional extras (choose a few!):
1/8 teaspoon baking powder, for fluffier pancakes
1/8 teaspoon salt
1/4 teaspoon vanilla
1 tablespoon cocoa powder
1 tablespoon honey
1/2 cup chopped nuts, chocolate chips, or a mix
1/2 cup leftover granola
1 cup fresh fruit, like blueberries, raspberries, or chopped apples
Butter or oil, for the pan
Maple syrup, jam, powdered sugar, or any other toppings, to serve

To make:

Mash Banana; add extra ingredients; add eggs; fry until cooked on both sides & add any extra loose toppings.
